When I set out on a journey and have local food, I prefer places that locals love. It is a blissful moment for big eaters to look at menus. The more dishes the better, but there should be consistency. Yet, I need some surprises too. If I think of it as a little luxury and a reward for hard work, it even gets more difficult to decide. Even the time spent choosing dishes is precious. Toriya-jaya is a place where you can enjoy that kind of luxury. I had some dishes and sashimi which they had recommended while I was talking with the chef. I again find that it is fortunate to have a mentor. There are words of his mentor everywhere in his story. The years of his apprenticeship still live in him and that gives his answers a feel of reality. The alcohol you have in front of a cook who is careful with his work is something special indeed. At Toriya-jaya, which has been in business for 80 years, while looking at fish in the fish tank, I asked, “If I don’t cut corners at work, surely someone will understand the value of it, right?” “Yes!” He answered aloud right away. His eyes were pointed directly at me. Alright! I decided to do my best at work the next day.
