The taisho (owner of the establisment) wears nikujuban, a type of Japanese shirt that people usually wear during festivals. His menu makes me excited just looking at it. The taisho writes his menu by hand on a piece of white paper and puts it on a thick wooden board everyday. There are no prices written. A customer sitting next to me treated me to dishes of shishamo (smelt) and ayu (sweetfish). The ayu dish goes well with Japanese sake. The taisho asks me if I want my skipjack tuna with skin or without, and with ginger or garlic. At the counter, there is a jar full of roasted fins of blowfish. He says the roasted fin sake is creamy. Customers look at the taisho and figure out the right timing to order food or talk to him. His master said, "Try to vibe with your customers. And get regular customers who can vibe with each other." A relationship in which you can respect each other. That is an ideal restaurant. A customer in the counter seat moved the menu board so that customers sitting on tatami mats can see it easily. This is a restaurant where people who care and get along with each other can gather and have some drinks.
